This Quick Peanut & Veggie Curry has been on repeat in my kitchen for years. It’s one of those meals I throw together when I want something warm, creamy, and satisfying without spending ages cooking. It only takes about 20 minutes in my trusty Crumble Dutch Oven, uses things I usually already have in the pantry, and hits all the right notes - rich, a little spicy, super comforting. - Maria (The Almond Lane)
Heat a Crumble Dutch Oven over medium-high heat. Add oil, onion, garlic, ginger and chilli. Sauté for ~4 minutes
Reduce heat to medium-low. Stir in peanut butter and coconut cream. Simmer for another 4 minutes
Add red pepper and spinach, cook for another few minutes and taste and adjust. I often add more salt or a bit more of peanut butter
