These easy and delicious dessert puffs are proof that you don't need to be a pastry chef to create a show-stopping dessert. Enjoy crisp shells with a delicious filling and beautiful presentation making it perfect for parties, celebrations or just a fun weekend treat.
Remove the shortcrust pastry from the freezer and let it soften on the bench top or overnight in the fridge.
For extra flaky puffs, you can pre-heat your air fryer at 150 degrees celsius for 10 minutes.
Using a hand mixer, whip the cream until thick. Be careful not to over beat - stop once it holds its shape.
Once your pastry is soft, use a cookie cutter to cut circles to form your pastry shells.
Place the pastry circles in the air fryer basket and brush with egg wash (1 egg whisked). Air fry for about 10 minutes or until golden before transferring to a wire rack to cool
Once cooled, take one pastry circle and add a teaspoon of jam in the centre, followed by a dollop of whipped cream on top of the jam. Lay on a tray and refrigerate while preparing the icing
In a bowl, mix icing sugar with a small amount of red food colouring or reds powder and a small amount of water - add the water gradually so as not to make the mixture too watery
Ice pastries and follow with freeze-dried raspberries or sprinkles immediately
Place iced pastries back into the fridge until ready to serve. These can be stored in an airtight container in the fridge for a few days, but note that the pastry may soften over time due to the filling.
