

[Hi guys!] I'm Holly, a total foodie and now a dietitian! I've loved food for as long as I can remember. As a kid, I was always experimenting with flavours and sneaking into the kitchen to 'test' recipes. I brought my passions to life after graduating at the end of 2024 with a Bachelor of Nutrition and Dietetics, and now I split my time between working as a clinical dietitian and sharing recipes on Instagram. For me, food is art, it's creative, colourful and nourishing all at once.

Breakfast is normally baked oats or granola with yoghurt and berries, although if I've got the time, I'll definitely whip up a stack of panckaes or avo on toast. Lunch is usually a loaded sandwich (we're talking chicken, egg, cheese, and plenty of fresh salad).
For dinner, I often mix things up but right now I'm obsessed with Swedish Meatballs or Creamy Salmon with mash. Snacks are a must in between; popcorn, fruit, museli bars, zucchini slice, cheese and crackers are always on rotation. And, of course no day is complete without something sweet - my current favourite is a gooey chocolate mug brownie.
That all fats are bad for you! We actually need healthy fats for our bodies to function properly. Unsaturated fats, like what you can find in avocado, salmon, nuts, seeds and olive oil and incredible for supporting heart health and also reduce inflammation.

[I would say] start small by adding more fibre - it's a simple yet effective way to boost nutrition without feeling too restrictive. By this, easy swaps can be grain bread instead of white, adding beans to your pasta or stews, or an extra serving of veggies at dinner. The secret here is really to upgrade your usual staples, instead of removing them which can make it feel too restrictive.
[Ooh] my Banana Date Pudding with Caramel Sauce really blew up. It's one of my all-time favourite recipes too which made me really happy.
As for go-to meal prep tips, one-pan or tray-bake meals are a top favourite for me for minimal clean-up yet retaining maximum flavour. I'm also a huge fan of fresh herbs (especially dill) to add variety, fibre, and a little flair to almost any dish.

If I had to give it a personality, I'd definitely say my Crumble cookware is hardworking! I've used them every single day and they make magic happen no matter what I throw at them.
For this recipe, I made a Chicken and Leek Risotto in the Deep Ceramic Fry Pan. I love this recipe especially when it comes to meal prepping my work lunches as it comes together easily in one pan, yet packs a punch of flavour.
