Air Fryer Berry Pastry Pockets

Directions

1. Heat a skillet over medium heat and add the berries, chia seeds, and maple syrup. Simmer gently for about 5 minutes, or until the mixture begins to thicken. Remove from heat and set aside to cool.
2. While the berry mixture cools, cut your pastry sheets into quarters (4 squares per sheet) and allow them to thaw. Preheat your air fryer to 180°C.
3. Once the berry mixture has cooled, place a dessert spoon of filling in one corner of each pastry square. Fold over to form a triangle.
4. (Tip: To help seal the pastry, dip your finger in water and run it along the edges before folding.)
5. Dip the tip of a fork in water and press down along the two open edges to crimp and seal the pastry triangles.

6. Brush each triangle with egg wash. Place two at a time in the air fryer and cook for 10–12 minutes, or until golden and puffed. Continue until all triangles are cooked.

7. Allow to cool slightly, then dust with icing sugar before serving.
