1 yellow onion
Vegan Parmesan (makes 1 jar)
Dice the onion, slice the mushrooms, mince the garlic and set aside
Heat a little oil or water in a large and deep pan, once hot add in the onion and sauté until softened
Add in garlic, Italian seasoning and mushrooms.
Now add in the vegetable broth, bring to a boil, add the pasta and let simmer for 10-12 minutes until the pasta is al dente and has absorbed most of the liquid. Stir frequently, especially when the liquid is absorbed (add extra liquid if needed)
Once the pasta is al dente, add in the plant milk, tahini, lemon juice and zest, dijon mustard and salt. Stir well (and frequently) to combine and let this cook for 3-5 minutes, or until the sauce has thickened and is very creamy
Serve with cashew parmesan and fresh parsley!
Add all ingredients to a blender or food processor and mix until it is finely chopped, don't mix too long if you want some bigger lumps
