A nutritious twist that still offers a delightfully indulgent flavour profile. Get your five a day and more with this veggie-packed gnocchi recipe.
Ingredients
- 1 head broccoli, finely diced
- 3 cloves of garlic
- 1 cup fresh mixed herbs (I used: coriander, dill, tarragon, mint and chives)
- 2 tsp capers
- 250g Coconut Yogurt
- Juice of 2 Lemons
- Drizzle of Olive Oil

Directions
- To make the dressing, combine mixed fresh herbs, garlic, capers, coconut yoghurt, lemon juice and olive oil in a food processor. Blend until smooth.
- Cook pasta as per packet instructions (leave slightly under done as you will fry off at the end.
- Drain Pasta and set aside.
- Add 1 tbsp olive oil, broccoli, salt, pepper and chilli flakes to the pan. Cook to your desired consistency (I like to leave my broccoli slightly crunchy)
- Add drained pasta back into the pan and desired amount of green goddess dressing (add any leftover to a jar in the fridge – this is a perfect base for salads, pastas and dips!) and combine with broccoli.
- Remove from the heat and enjoy!
