Looking for something indulgent, cozy and packed with umami? Then you have to try this Creamy Mushroom Truffle Udon. Think thick, bouncy udon noodles coated in a velvety blend of creamy garlic mushrooms and finished with a luxurious swirl of truffle paste. The perfect dish for when you're feeling a bit extra on a weeknight.

Ingredients

1 tsp olive oil
2 cloves garlic (chopped finely)
1/2 brown onion (diced)
150g mushroom of your choice (I used a mix of 3 types)
1 cup chicken stock
1/2 cup milk of choice
1/3 cup heavy cream
2 blocks of Udon (Frozen)
1 Tbsp truffle paste
Salt & pepper

Directions

Start by warming up your pan with a drizzle of oil over medium heat. Toss in the chopped garlic and onion and sauté until you get a fragrant aroma.
Next, add in sliced mushrooms and cook until tender and glossy
Add chicken stock and milk and give everything a good mix, seasoning with salt and cracked pepper to taste and finish by stirring in the heavy cream
When you are happy with the taste and consistency, add in the udon noodles and simmer on low for two minutes
Once noodles are soft and bouncy, turn off the heat and swirl in the truffle paste, ensuring it is evenly mixed through
Serve hot with a sprinkle of parmesan or drizzle of olive oil
