Packed with a tonne of flavour, this tofu scramble is quick, easy and the perfect plant-based alternative to traditional scrambled eggs. With vegetables folded in and seasoned with turmeric, garlic and nutritional yeast, it's a protein-rich breakfast and a wonderful way to kick-start your day.

1/2 or 1tsp kala namak or black salt (depending how eggy you like it - we used 1 tsp)
In a frying pan, melt vegan butter and add in the mushroom and tomatoes. Once the juices start releasing, crumble in the firm tofu and fry for a few minutes and then 3) Add the silken tofu mixture and cook through until it's thickened up. Sometimes it takes a while so be patient and scramble only every couple of minutes.
Serve over sourdough toast, in a breakfast burrito or even on its own. This recipe is just too good not to try.
