1 Tbsp Oil
1 Brown Onion
800g Lean Beef mince

Directions

Heat your Crumble Pumpkin Casserole over medium heat. Add the oil and diced onion, and sauté for 2–3 minutes, or until the onion is softened, translucent, and fragrant.
Add the beef mince and cook, breaking it up with a spatula, until it is mostly browned.
Add the chopped vegetables and stir to combine. Continue to cook for a few minutes, allowing the vegetables to begin softening.
Stir in the beans, spices, tamari, tomato paste, diced tomatoes, and vegetable broth. Mix well to ensure all ingredients are evenly combined.
Reduce the heat to low, cover with a lid, and let the mixture simmer gently for 25–30 minutes, or until the liquid has reduced slightly and the vegetables and beans are tender.
Serve warm with corn chips, sour cream, sliced avocado, and spring onions for a hearty, family-friendly favourite.
