A great vegetarian alternative to the classic sausage roll. The classic combination of spinach and feta will be a guaranteed crowd pleaser at any foodie gathering.
Heat a Crumble Skillet over low heat. Tip in the spinach and cook, stirring, until wilted. Leave to cool a little, then squeeze out as much water as possible and chop.
In a bowl add, spinach, onion, parmesan, parsley, garlic, feta and 1 egg. Mix until well combined.
Heat oven to 190C. Brush a Crumble Skillet with some of butter and/or line with baking paper.
Lay a filo sheet on your work surface. Brush with some of the melted butter, then spread about 2 tbsp of the filling in a line. Roll loosely into a long sausage, then coil the pastry.
Repeat with the rest of the pastry and filling, arranging the coils to form a circle. Brush the tops with an egg wash, then sprinkle with sesame and poppy seeds. Bake for 25-30 mins until golden and crisp and enjoy!
