Laksa – the iconic Malaysian spicy coconut noodle soup is delightfully rich in flavour, and so fun to eat when loaded with all the essential classic toppings. This easy recipe comes together quickly and you can also swap dumplings for your favourite variety of noodle.
Ingredients

2 Tbsp Red Curry Paste

2 Tbsp Curry Powder

400ml Coconut Milk

4 Cups Chicken Stock

Sugar (according to taste)

Fish Sauce (according to taste)

400g Hokkien Noodles and/or Frozen Dumplings

400g Peeled Prawns
-
100g Fish Cakes
-
1 Head Bok Choy
-
2 Soft-Boiled Eggs
-
Bean Sprouts
-
Coriander
-
Chilli
-
1 Lime (Quartered)
Directions
Heat your dutch oven with oil over medium heat.
Add curry paste and curry powder and stir together until fragrant.
Mix in coconut milk, chicken stock, sugar and fish sauce and bring to a simmer.
Once fragrant, add prawns, dumplings and fish cakes. Once your dumplings and fish case float to the top, they are ready to eat.
Prepare your noodles according to package instructions and distribute into bowls. You can also blanch your bok choy in the same water used to prep your noodles.
Finish with a boiled egg, bean shoots, coriander, chilli and a squeeze of lime.
