Our favourite recipe for when there's no time to get those layers of pasta in perfect position, but still want that big flavour hit.
Ingredients

500g Italian Pork Sausage Mince

1 Brown Onion (Diced)

2 Carrots (Sliced)

2-3 Garlic Cloves (Minced)

2 Tbsp Tomato Paste

1 Can Diced Italian Tomatoes

500g Jar Tomato Pasta Sauce

1L Chicken Stock
-
½ Cup Thick Cream
-
¼ Cup Mozzarella
-
¼ Cup Parmesan
-
3-4 Tbsp Ricotta
-
100g Spinach (chopped)

1 Box Curly Lasagne Sheets
-
Salt & Pepper
-
1 Tsp Paprika
-
1 Tsp Oregano
-
1 Tsp Olive Oil
Directions
Heat oil in your dutch own over medium heat
Add sausage and break it up with a spoon, then add your onion, carrots and garlic. Cook until soft and fragrant.
Add in salt and pepper, paprika and oregano.
Next, stir in tomato paste, pasta sauce and stock and bring to a boil.
Reduce heat to low and stir occasionally until thickened slightly.
Break up lasagne sheets into medium sized pieces and add to the soup mixture.
Once pasta is tender, finish by adding in cream and cheese. Add additional salt and pepper if required.
