Spooky Stuffed Capcicums

Directions

1. Preheat oven to 200C.
2. Slice the top of each capsicum horizontally. Set tops aside and create Jack-o-lantern faces on the exterior. Prepare filling by cooking carrot, onion, mince and garlic together until slightly brown.
3. Season with salt, paprika, Italian seasoning, onion powder, chilli flakes and tomato paste.
4. Add canned tomato and allow to simmer.
5. Add cooked rice, corn and olives and mix until evenly distributed.
6. Scoop the filling into the capsicums and top with shredded cheese.
7. Bake in the oven for 20-25 minutes or until slightly soft.
8. Top with parsley and enjoy!
