Ingredients
- 1 cup cooked rice
- 5-6 capsicums
- 1 carrot, diced
- 1 onion, diced
- 1/2 can of corn
- 2 tbsp tomato paste
- 1/2 cup diced tomato
- 300g beef mince
- Olives, sliced
- 2 garlic cloves, minced
- 1 tbsp salt
- 1 tbsp paprika
- 1 tbsp Italian seasoning
- 1 tbsp garlic powder
- 1 tsp chilli paste or chilli flakes
- Cheese, shredded
Directions
- Preheat oven to 200C.
- Slice the top of each capsicum horizontally. Set tops aside and create Jack-o-lantern faces on the exterior. Prepare filling by cooking carrot, onion, mince and garlic together until slightly brown.
- Season with salt, paprika, Italian seasoning, onion powder, chilli flakes and tomato paste.
- Add canned tomato and allow to simmer.
- Add cooked rice, corn and olives and mix until evenly distributed.
- Scoop the filling into the capsicums and top with shredded cheese.
- Bake in the oven for 20-25 minutes or until slightly soft.
- Top with parsley and enjoy!
