
Our foodie friend, Brooklyn from @theconsciouscook_ shares her delicious and nutritious take on the classic takeout favourite, Pad Thai! An easy and satisfying one pot recipe that will delight everyone.
Ingredients
- 1 cup cauliflower
- 1/2 tsp turmeric powder
- Bean sprouts
- Garlic chives
- 1/2 carrot, julienned
- 4 baby corn spears
- 1 packet fry rice noodles
- Lime, to garnish
- Crushed peanuts, to garnish
- Chillies, to garnish
- Coriander, to garnish
- 3 tbsp coconut sugar
- 1 tbsp soy sauce or tamari
- 1 tbsp water
- 2 tsp fish sauce or vegan fish sauce
- 1 tbsp tamarind purée
- 1 tbsp vegetarian oyster sauce
For the Sauce
Directions
Chop up your veggies and set aside.
Add 1tsp of your oil of choice to the Crumble Deep Fry Pan and add in all the veggies asides from the chives and corriander, followed by a splash of water and turmeric powder. Cover with the lid to allow to steam.
While the veggies steam, prepare your noodles to package instructions on the side along with the Pad Thai sauce.
Once noodles are ready, add them to the veggies followed by the sauce and stir together until noodles are coated completely.
Lastly, stir in chives and finish with a sprinkling of peanuts, coriander, a squeeze of lime and chillies if desired.
