Our foodie pal, Liv from @livstable shares a delicious, quick and nutritious One Pan Mediterranean Barramundi that's perfect served over your favourite grains.
2 tbsp olive oil
Heat the olive oil in a large pan over medium heat. Add the diced onion and sauté for 4-5 minutes until softened. Add the capsicum and garlic and cook for a further 5 minutes until softened, stirring occasionally.
Note: this dish pairs perfectly with pasta, brown rice or cous cous.
