Ingredients
- 2 Tbsp butter
- 2 medium carrots, sliced
- 1/3 cup flour
- 6 cups chicken stock
- Salt/pepper to taste
- Fresh thyme + rosemary
- 1/2 rostesserie chicken, shredded
- 3 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 5 mushrooms, chopped
- 3 small potatoes, chopped
- 1 cup corn/peas, frozen
- 1/2 cup thickened cream
- 1-2 Puff pastry sheets
Directions
- Heat a Crumble Dutch Oven over low to medium heat and melt in butter. Add onion, celery, and carrots and sauté until softened and lightly golden.
- Add mushrooms and garlic and sauté for until softened.
- Add flour and stir for 1 minute until golden.
- Add chicken stock, potatoes and season to taste. Bring to a boil then reduce heat to a simmer, partially cover and cook 12-15 minutes or just until potatoes are tender.
- Add chicken, peas/corn, and cream. Bring back to a simmer and continue to cook for another 5 minutes or until peas and corn are tender. Serve with black pepper and puff pastry hearts and enjoy!
