Easy and comforting, this Creamy Tomato Gnocchi by our foodie pal, Maddy from @mamanutritionist will become your weekly go-to in no time. This dish is perfect for making in bulk if you have a larger family and only requires a few everyday ingredients that you should already have in your pantry.
It's a recipe that is filling even as a (mostly) meat-free main dish and best of all, it comes together in just one pan, meaning more eating, max flavour and less cleaning!

Heat your 28cm deep frypan on a medium flame, season with olive oil and add in your gnocchi.
Fry the gnocchi on both sides until golden brown, then remove from the pan and set aside.
Add in a teaspoon of olive oil and cook the bacon until crispy.
Add in the garlic and cook for 1 minute.
Mix through the tomato paste, salsa, cream, gnocchi and 150ml of water.
Place the lid on the pot and let simmer, stirring occasionally.
When the gnocchi is soft and the sauce has reduced, remove it from the heat and serve with fresh basil and grated Parmesan.
