A play on the popular 'Marry Me Chicken', this alternative features delicate and juicy salmon fillets for that delicious umami punch. With only a handful of ingredients, low prep and 30-minutes of cooking, this will quickly become your weeknight staple.
Ingredients
- 4 salmon fillets
- 3 cloves of garlic
- 1/2 cup sun-dried tomatoes
- 1 cup vegan chicken stock
- 2 tbsp olive oil
- 1 tbsp corn flour
- 2 tsp Italian seasoning
- Handful of spinach
- 1/2 cup coconut cream or milk
- Fresh basil
- Celtic sea salt
Directions
Chop off your garlic, sun-dried tomatoes, basil. Start to fry off the tomatoes and garlic with some olive oil.
- Add Italian seasoning, broth and corn flour. Next add your salmon fillets.
- Add coconut cream and salt. Add spinach and cover with the lid while the salmon cooks.
- Garnish with basil leaves and enjoy!
