Smoky Jackfruit and Black Bean Nachos

A healthy twist on one of our favourite sharing dishes, Nachos! What we love most about this dish is how colourful and stunning it looks when put together. Not to mention, it's packed with delicious veggies and flavours that come together perfectly with each bite.
Ingredients
- 1 can black beans, drained
- 1 can jackfruit in water or brine, drained
- 1/2 brown onion, diced
- 1 can diced tomatoes
- 2 garlic cloves, minced
- 1 tsp chipotle chilli powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp chilli powder
- 1/2 tsp coconut sugar
- Celtic sea salt
- 1 avocado
- 1/2 lime
- Jalapeño
- Corn chips
- Unsweetened coconut yoghurt or sour cream
- Coriander
- 1/4 cup charred corn kernels
Garnishes & Toppings
Directions
Chop up your garlic and onion. Next peel your fresh corn and char off.
- Fry off garlic and onion.
- Add tomatoes, jackfruit and black beans.
- Season your dish and add cheese.
- Allow to cook through before garnishing with your toppings of choice.
