Crisp, crunchy fries loaded with caramelised onions, melted cheese and an addictive zesty sauce - can it get any better that that?

Make sauce and set aside.
Peel and cut potatoes to your desired shape.
Rinse and drain, and cover with cold water until submerged. Season with salt. Let sit at room temperature for 30 minutes.
Remove fries from the water and dry off on a paper towel. Parboil for 3-4 minutes and dry before coating with cornflour.
Heat your Crumble Baby Dutch pot filled with frying oil.
Fry the fries in batches for 3-4 minutes. Remove and drain on a fresh paper towel. Repeat with the remaining fries.
In batches, add fries back into the oil and fry for 2-3 minutes. Remove and immediately season with salt.
Top fries with cheese and place in the oven until melted. Layer with sauce and top with leftover grilled onions and enjoy!
