
HK Style Mango Pancakes

Whether you're a yum cha fanatic, or simply a mango lover, you have to give this HK Style Mango Pancake recipe a go! Especially since we're now in sweet, sweet mango season, this easy recipe is perfect for your next tea party and tastes exactly like the real deal.
Ingredients
- 1 cup milk
- 1/3 cup plain flour
- 1/4 cup cornflour
- 1/4 cup icing sugar
- 3 large eggs
- 1/4 tsp yellow food colouring
- Canola oil spray
- 2 large ripe mangoes
- 3/4 cup thickened cream
- 3 tbsp icing sugar
- 1/2 tsp vanilla extract

Directions
Add milk, flour, cornflour and sugar to a bowl and whisk until combined.
Add eggs and food colouring until it forms a thin watery batter. Refrigerate for 1 hour.
Heat a Crumble Non-stick pan over medium heat. Pour 4 tbsp of the batter onto the pan and swirl to cover the base in a thin layer.
Cook for 45 seconds to 1 minute and loosen the edges with a spatula.
Flip the pan onto a large plate and repeat this process. Allow the crepes to fully cool before assembling.
Place a crepe on a flat surface and add a spoon full of cream. Top with a slice of mango and roll the pancake into a mini burrito. Serve and enjoy!
