Ditch the quick oats, this Brekkie Frittata is just as easy to make - all you need is a few ingredients and one cast-iron skillet to create the best brekkie ever!
Ingredients

8 eggs

1/4 cup milk or cream
-
1/2 tsp salt & pepper

Mozzarella
-
100g prosciutto
-
200g cherry tomatoes, halved

1 tsp chilli flakes
-
1tsp dollops of Basil Pesto
Directions
Preheat oven to 180°C fan.
Add eggs, milk, salt and pepper in a bowl. Whisk until well combined.
Add tomatoes to the skillet. Cover with egg mixture and top with prosciutto, ripped mozzarella and spoonfuls of pesto.
Bake for 20 minutes or until centre is just set. Rest for 5 minutes and enjoy!
